Instructions now reflect new stack which reflects:

1 - New docker-compose file (version 2)
2 - use all images directly from hub instead of building
3 - added networks front/back to separate services
4 - New Dashboard available via Grafana.net
5 - Grafana uses an env file to store passwords, etc
